  1. Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out as much moisture as possible. This helps create extra crispy patties.
  2. Grate the carrot and finely chop the green onions.
  3. In a large mixing bowl, combine the grated potatoes, carrot, cheese, green onions, garlic, eggs, flour, cornstarch, salt, black pepper, paprika, onion powder, and parsley.
  4. Mix everything thoroughly until the ingredients are evenly combined. The mixture should hold together easily. If it feels too wet, add another tablespoon of flour.
  5. Scoop about 2 tablespoons of the mixture and shape into oval or round patties with your hands.
  6. Heat a thin layer of vegetable oil in a large skillet over medium heat.
  7. Carefully place the patties into the hot pan without overcrowding.
  8. Fry for 4–5 minutes per side, or until they become beautifully golden brown and crispy.
  9. Transfer the cooked patties to a plate lined with paper towels to remove excess oil.
  10. Serve hot with sour cream, garlic yogurt sauce, ketchup, spicy mayo, or your favorite dipping sauce.

  • Always squeeze the potatoes well to prevent soggy patties.
  • Add chopped parsley, dill, or cilantro for extra freshness.
  • For a spicy version, mix in chopped chili peppers or red pepper flakes.
  • These patties can also be baked at 400°F (200°C) for about 25–30 minutes, flipping halfway through.
